  • 16 oz Freshiez Chili
  • 2-4 Russet Potatoes (2 large or 4 small)
  • 1/4 cup Vegan Nacho Cheese
  • 1/2 pound Broccoli
  • 1 Jalapeno - sliced into thin rings

  • Preheat oven to 375 degrees
  • Cut your broccoli into bite size pieces while your oven is pre-heating
  • Feel free to microwave your potatoes for 3 minutes in 1 minute intervals, while your oven preheats. This step isn't necessary, but it will speed up the cooking process
  • Heat your chili using one of the methods below
You can either cut your pouch of chili open and heat it, or you can heat the chili in the BPA free pouch it came in by dropping the pouch in boiling water and boiling for 10 minutes. If you choose to cut the pouch open, you can place it onto a microwave safe bowl and microwave it, to you can pour it into a sauce pan and place it on a burner and heat on low medium heat until it has reached 160 degrees.
  • Place your potatoes on a baking sheet and place in your oven once it is preheated then set a timer
  • You can cook your broccoli in boiling water, or you can throw it on a pan and roast it in the oven for 12 minutes - time this accordingly with your timer for your potatoes
  • Heat Nacho Cheese in a microwave safe bowl and set aside
  • When potatoes are fork tender and baked enough for your liking, slice one side with a knife then open the potato up by pushing the two ends of the slit towards each other
  • Add a dollar of vegan butter, then top with Chili, Nacho Cheese and Jalapeños with broccoli on the side
  • Enjoy
